If you don’t think event food and beverage can get better than a buffet, it’s time for a palate cleanser. You’re not just feeding the masses; you’re fueling their creativity, inspiring connection, and keeping them coming back for more. We hope you’re ready to spice things up, because we’re serving up this year’s hottest culinary trends for you to devour.

Setting the table for connection

While you may be used to planning a feast for the eyes, you don’t want your guests to leave your meal saying, “It was all sizzle, no steak” (unless they’re talking about the vegan entree option, that is.) This year, plating Instagram-worthy hors d’oeuvres isn’t nearly as important as curating an immersive dining experience. After all, isn’t coming together over food and drink an age-old recipe for human connection?

Food for thought: education disguised as decadence

Food is a cornerstone of any culture, corporate or otherwise. In 2026, we’re aligning dining with the community we serve, so attendees can stop networking and start savoring time together. This means creating warmer and more human ways to refuel. Think roaming local bites, chef-guided experiences, and wine bar carts. For a recent group’s Happy Hour, we spiced things up with a tequila tasting and guacamole-making session. Attendees were still indulging, but they were also learning together and mingling while they sipped and smashed (the avocado, of course).

Memorable moments are on the menu

This year, F&B is giving main character energy. Trust us, it’s going to be a talking point. Make it one for the right reasons. Don’t try to shoehorn your menu into your theme; use it as your compass. Innovative cuisine can color your attendee experience more than any decor. Experience-based dining is here to stay because it reflects how we want to socialize. It encourages movement, spurs conversation, and lives rent-free in their minds, making their mouths water for months to come.

Food for thought: dining that drives the theme home

At a conference in Anaheim, our client planned to have four food stations, one in each corner of the event space. To honor Orange County’s infamous food truck scene, our team enhanced the experience by placing food-truck facades behind each station. We developed fun truck names that reflected the event’s overarching rock ‘n’ roll theme. Attendees loved the new take on the traditional food station because it was fun, true to the destination, and delightfully unexpected.

Inclusivity and intention are key ingredients

Conscious menu design is now a baseline expectation, not a bonus. Diet-forward, inclusive food and beverage offerings are essential to ensure every guest has a delicious experience, regardless of their restrictions or preferences. Allergens should be clearly labeled and communicated to attendees, so everyone feels safe and accommodated.

Sustainability has also gone from a side dish to the main event. Planners must work closely with vendors to encourage the use of compostable dining-ware and reusable serving-ware. Do some research and see if there are local options for donating leftover ingredients or packaged foods. In 2026, the goal should be to reduce waste while still offering exceptional options.

The champagne tower effect

Like the little black dress, a spritz of Chanel No. 5, and leading with kindness, some things never go out of style. Few beverage displays have the staying power of a champagne tower. The soaring height creates spectacle, the bubbles feel exciting, and the sidelines are ripe for selfies, especially during the thrilling cascade of the first pour.

Food for thought: an effervescent arrival

At the end of 2025, our team decided everyone could use a little celebration. We transformed an underutilized counter space into a wow-worthy welcome beverage in San Diego. Together with our catering and bartending partners, we created a display of towered champagne glasses. Guests were greeted with a glass of bubbly, immediately setting the tone for the evening. Everyone stopped to take photos, champagne flowed, and the activation became an organic focal point of the arrival experience.

The spinning plates: balancing creativity, expectations and budget 

Setting the culinary bar to showstopping may seem like a great way to bust your budget. However, if you’re smart about your partnerships and mindful in your execution, you can exercise your creativity within any constraints. When determining where to allocate funds, conduct research to identify what matters most to this group. Serving caviar to a burger and fries crowd or creating a signature cocktail when your conference attendees just need their latest caffeine fix will leave a sour taste in everyone’s mouths. If you’re catering to foodies, focus on elevating the dining experience while keeping beverage options simple. When the event calls for top-shelf libations, pair drinks with lighter bites. With superstar partners on your side, you can collaborate to exceed expectations without the sticker shock.

Our DMC roots run deep, so it’s no surprise that destination-inspired menus and cultural culinary storytelling are near and dear to our hearts (and our stomachs). For a recent program in Arizona, the restaurant served up a “delectable desert🌵”. This dessert was sculpted from ice cream, marshmallows, and graham crackers, shaped into a mini cactus honoring the local landscape. The artistry and thoughtful execution stole the show, giving our guests and team alike a dish to remember.

The last bite 

Few experiences bring people together better than breaking bread and clinking glasses. Sharing a meal at an event creates an emotional resonance and memories that long outlast any doggie bags. While we may feel the need to fill our social feeds with pretty visuals, culinary trends that prioritize human connection over Instagram likes are where the real success lies. The best events make you wish you could stay for seconds.
